Microgreen Recipe - Egg Quiche

Need a microgreen recipe? We have you covered! Try these delicious Sourdough Quiche muffins that include our Broccoli and Radish microgreens. Don’t have a Sourdough starter handy?? Don’t worry! This recipe can be adapted for any pie crust or use this as the inspiration to start a starter! 

We like to make mini quiches because they are easier to grab. Also the crust is one of the best parts!

Microgreen Recipe - Sourdough Quiche Muffins

Yields: 12 Quiche Muffins

Crust Ingredients:  from Maine Grains Farmstyle Quiche with Sourdough Crust Recipe

  • 2 tbsp Sourdough Starter**

  • 1 Cup All Purpose Flour (Plus more to roll out dough)

  • 6 tbsp Butter

  • ½ Cup Milk (We used Oat Milk)

  • ½ tsp Salt

**If you don’t have a sourdough starter - use a regular pie crust, or try this recipe from Sallys Baking Addiction

Filling Ingredients

  • 6 Eggs

  • ½ Cup Milk (We used Oat Milk)

  • 6 ozs Cheddar Cheese

  • 1 Handful Radish Microgreens

  • 1 Handful Broccoli Microgreens

  • ½ tsp Salt

  • ½ tsp Garlic Powder

Instructions

  1. Mix the sourdough starter, flour, and salt

  2. Grate the butter into the sourdough mixture and mix until well combined. Add the milk and combine into the dough

  3. Let the dough rest in the fridge for at least 1 hour

  4. Preheat oven to 375°F

  5. Grease a muffin tin with butter or coconut oil

  6. Roll out the dough and make it as flat as possible

  7. Use a coffee mug to make the crust shape. Cut out the circle and press into the bottom of the muffin tin

  8. Bake quiche crusts for 15 min

  9. While the crust is baking, make Quiche filling. Dice up microgreens, grate cheese and mix all Quiche fillings together

  10. When quiche crusts are finished, fill each crust with the quiche filling and bake for 30 min
